Pork and Noodle Stir Fry
Ingredients:
1 Onion finely sliced
2 tbsp oil
450g thin fresh hokkien noodles
350g pork fillet sliced thinly
1 carrot sliced
1 small red chilli without seed chopped finely
4 cloves garlic, crushed
2 tbsp thai red curry paste
2 tbsp fish sauce
1 tbsp brown sugar
1 tbsp lime juice
4 spring onions sliced diagonally
Some of your favourite leaves for garnish (parsley, coriander)
Method:
Start by rinsing the noodles under cold water, draining in a colander. Set wok over stove on high and heat 1 tbsp of oil. Proceed to cook pork for 3 minutes or until cooked. Set aside. Heat remaining oil in wok and add onion and carrot, cooking for a minute before adding the chilli, garlic and curry paste, then stir fry for another minute. Finally put pork, fish sauce, sugar, lime juice, noodles and spring onions into the wok and cook until heated through. Garnish with fresh coriander or parsley.
