Syrian Chicken with Ginger, Lemon & Saffron
Ingredients:
1 tsp salt
2 tsp cumin, ground
2 tsp cinnamon, ground
1 tsp freshly cracked black pepper
1 1/3 tsp turmeric, ground
1 kg chicken thigh cut into pieces
Olive oil
1 brown onions, chopped
3 cloves garlic and an equivalent amount of ginger
1 pinches chilli
1 tomatoes chopped
Small pinch cumin seeds
1 sprig thyme
1 lemon juiced and zest
2 tbsp honey
1 tbsp vegetable stock powder
1/3 bunch of coriander
Rice or couscous to serve
Method:
Combine salt, cumin, cinnamon, pepper and turmeric in a large plastic bag. Add chicken pieces and shake to coat. Heat olive oil in a large pan over high heat and add chicken, browning all over. Then remove from pan and set aside. Add onions, ginger, garlic and chilli to pan and cook for 3 minutes, adding more oil if necessary. Then add tomato, cumin seeds and thyme cooking for 2 minutes. Then return chicken to pan and add lemon zest, honey, stock and some water. Simmer for 10 mins on medium heat or until chicken juice is reduced. Stir in coriander and serve.
